Word order changes in Latin primarily for emphasis. The first sentence is more or less the normal word order for Latin. The second emphasizes that the dog was given to the girl when perhaps one expected the dog to be given to the boy. The third sentence emphasizes that it was a dog that was given when perhaps one expected a flowers.
